Topanito Mezcal comes from the Mexican distillery Amantes de lo Ajeno.
They are made from 100% espadín agave, which matures in the Mexican sun for up to 10 years. The cores of the agaves are roasted in holes in the ground for 5-8 days and then ground. After the mash has fermented for about 5 days, it is double-distilled.
